Mmmmmm...a recipe contest

I love seafood. We are lucky enough to have a fresh seafood market, down by the Missouri River, about 3 minutes from my house. When I was a little girl, Grandpa always took me there for my birthday dinner. We'd get delicious domestic shrimp and have a real feast. Frankly, I prefer domestic seafood. Whether it's a catfish caught in the Might Mo and breaded and fried, or fresh Alaskan crablegs, or Maine lobster, there just isn't anything quite like fresh seafood from the USA.  The taste is delicious and full, unlike seafood carted in frozen and a bit stale from other ends of the globe.

I have stumbled on a yummy recipe contest, and I wanted to share it with you. I encourage you to visit the site, look at the top 5 recipes, and vote for your favorite. In a random drawing, somebody who votes wins a trip to New Orleans on Southwest Airlines, with hotel and a dining experience included. The recipes are from chefs all over the US, who have combined domestic seafood with Cajun flair. I am hungry just reading through them.

I voted for the Pan Roasted Glazed Rockfish with Peas and Carrots. It was created by chef Tafari Campbell of Maryland. This dish sounds like the perfect combination of food for my family. Matthew aside, the rest of us love seafood. We all love peas and carrots in our recipes, too. This is also made of recipes most of us have on hand, too, so it's something mostly doable. I love the thought of the dish being served on a breaded taco shell type of base. I am actually going down to our local fish market and make this sometime next weekend.
